Apple Turnovers
Step 1: Pick a half-bushel of Cortlands from Apex Orchards in Shelburne, soaking up the sweeping views of mountainous southern Vermont and its motley autumnal tapestry on a pristine crisp October afternoon (the easiest step for us, the hardest for you). Step 2: Peel, slice, and pre-cook eight apples in butter. The rest of the half-bushel is for incidental enjoyment. Step 3: Cut, lump, roll, and punch out circles of dough (involves even more butter). Step 4: Combine the products of Steps 2 & 3 into plump promising crescents, turnovers, or alternately "pies-in-pouches." Brush with egg yolk. Step 5: Bake to a beautiful golden hue that will make the maples blush crimson with ire for lack of green envy. Step 6: Pierce the crisp crust with a fork, take a buttery bite, and think about how grand it is to live in New England in October.
